The 36-year-old railway worker was violently struck on the head by the passenger, whom he wanted to expel from the train after noticing the absence of a ticket, on Monday in Landstuhl near Kaiserslautern.
He died on Wednesday from his injuries, according to Deutsche Bahn.
"This is a dark day for all railway workers in the country," stressed the company's leader, Evelyn Palla, denouncing the increase in violent acts targeting staff.
The railway workers' union EVG, for its part, demanded the presence of security personnel on board the trains.
The assailant, aged 26, was arrested and placed in pre-trial detention, the prosecutor's office said.
